I love sweets!

It's Mardi Gras season at our house and Valentine's Day is coming up, so let's talk dessert. What is your favorite?  Your hubby's favorite?  Feel free to share a recipe.  I won't complain. ;)

  1. My son is allergic to eggs, dairy and peanuts, and I have several extended relatives who have Celiac Disease (meaning that they can't eat wheat products). So my dessert repertoire isn't what it used to be. But I do have a few go-to recipes. My husband loves grasshopper pie for his birthday (and while my son can't eat it, he can eat the mint oreos that I use to garnish it with). I make truffles each Christmas made out of chocolate chips and heavy cream, rolled up in cocoa (again, my son can't eat these, but there is always something on hand for him). I make chocolate mousse using melted chocolate chips and cool whip; I know it sounds weird, but it's actually really good! And for my Celiac relatives, I make peanutbutter chocolate chip bars using one cup of peanutbutter, one egg and one cup of sugar. For my son, we make cakes using a dairy-free cake mix (Dunan Hines are generally dairy free) mixed with one can of pumpkin, and we frost them with canned frosting (Betty Crocker contains dairy, but Duncan Hines is dairy-free, as are some store brands). The canned frosting is chock full of chemicals, but he doesn't eat things like that very often, and I'm just glad that he can eat something that his friends are eating.
