Do you eat breakfast? Every day? What constitutes a healthy breakfast for you? I'm usually in a rush in the morning and end up grabbing whatever I can eat in the car on the way to work. And I detest oatmeal! So I'm looking for healthy ideas that are quick and yummy. Please share!
When I was pregnant with our second daughter, I found that the only breakfast I could stomach was a toasted bagel with cream cheese. That was 10 years ago, and that is still what I have for breakfast almost every single day, with a mug of hot tea.
ReplyDeleteLike you, I'm not crazy about oatmeal, but I do like cream of wheat. Have you ever tried that? The instant version is quick and tasty.
Nothing beats a fresh-baked or toasted bagel with cream cheese (& a little lox, mmm!)...especially if the bagel comes from an old-fashioned NYC bakery! I am sometimes guilty of only having coffee for breakfast. I keep a big batch of homemade granola in the pantry, which is the usual go-to for the kids. It is pretty loaded -- with oats, wheat germ, nuts, seeds (flax & sunflower), coconut, spices (nutmeg, cinnamon, vanilla extract), & bonded with butter or coconut oil & a sweetener (honey, maple or agave syrup) before baking. Yogurt is another favorite, with granola or toasted wheat germ sprinkled on top. If breakfast is on-the-go, muffins or breakfast bread are generally what we have (if I plan ahead enough to have them ready). I sympathize about the oatmeal & have found steel cut oats (thought they take longer to cook) are a tastier alternative with a more dense texture & nutty flavor. They are quite tasty topped with toasted nuts & honey drizzled on the top. We are trying to go gluten free during Lent, so I will be experimenting with quinoa in lieu of granola, oatmeal & granola bars. Should be interesting...
